 Shakahari khane mein agar kuch special banana ho toh hamare yaha sabse pahle naam aata  hain paneer ka. Paneer  na  sirf  tasty  hota  hain, balki yeh sehat ke liye bahut hi faydemand bhi mana jata hain. Darasal  doctors ka yeh  manana hain ki kacche doodh mein bacteria  hone ki ashanka jyada  hoti hain. Jabki pasteurised doodh mein bacteria nahi hote hain. Lihaaza jyadatar desho mein  pasteurized  doodh se  bane  paneer  ka istemal kiya jata hain. Halaki India mein paneer  gaay, bhains ke doodh  se hi  banta  hain jo pasteurized karke  ya phir ubaalkar  hi banaya  jata hain.

Paneer kai baar gahra ya halke peele rang ka hota hain. Aisa isme mauzood Annatto ki wajah se hota hain. Bharat mein jaha gaay ya bhains ke doodh se paneer banaya jata hain, vaha isme peelapan jyada nahi hota hain.
Vaise bhi janwaro ke doodh se bane paneer mein peelepan ki wajah isme paya jane wala carotenoid padarth hain jo Fat ke contact mein aane se peelapan deta hain. Ab jaha kai janwaro ke doodh mein Vasa yani ki Fat ki matra 4% ya isse kam hoti hain jaise ki Bakri ya Bhed ke doodh ke saath Carotenoid apna asar nahi chhod pata hain.
